I’ve been drinking keto-coffee everyday for four years. It’s my breakfast. I wake up craving that creamy warmth. Or maybe it’s just the regular old caffeine that calls me to the kitchen. It never gets old; I never get bored. A few times a year I’ll have something else. My husband makes me the perfect poached eggs for my birthday breakfast. When we were moving last year, we had coffee from a stand a few times. Honest truth here, I don’t know what to order at Starbucks, or anywhere else for that matter. I stay home because my drink is better!! I drink this even when I’m not trying to lose weight, even when I’m not eating keto, even while pregnant. I did switch to half-caff while pregnant, but no way was I going to miss out on my favorite ritual.
Making and drinking coffee with my husband in the morning is one slow, sweet moment of togetherness as we begin the daily chaos of raising four children. Its also the best way to set the tone for healthy choices for the rest of the day. I already know what I’m going to have for breakfast when I wake up. I don’t have to use any brain energy to think about what I want or even to be tempted by other options. I follow the same basic recipe everyday. I know it so well, I don’t even have to measure, and I already know the macro nutrient contents. Here’s my recipe:
Keto Lately Coffee
Makes two large servings
3 T Kerrygold butter
2 oz MTC oil (this is ¼ C)
1 Premier Protein shake (I like caramel or vanilla best)
1 scoop Bulletproof Vanilla Collagen Powder (I’ve tried about 6 other types. This is my favorite)
40 oz fresh brewed drip coffee
I put everything in the blender, coffee last. Blend until frothy.
I pour this into two 32 oz insulated aluminum cups.
4 carbs, 47g fat, 21g protein, 535 calories, cheaper than Starbucks
